INGREDIENTS:
9 ounces puff pastry
8 ounces frangipane (a hazelnut-sugar paste available in gourmet stores)
1 bean
Egg wash

WHAT TO DO:
Roll pastry into 2 discs, of equal size and each about 1/2 inch thick. Place one disc on a parchment-lined baking sheet. Push bean into dough. (During baking, the dough closes up and conceals the bean.)

Spread frangipane on disc, leaving a 1/2-inch rim uncovered. Brush edge with water or egg wash. Place top disc over frangipane. With a sharp knife, trace a decorative pattern. Brush with egg wash.

Bake at 475° F. until dark golden brown, 20-30 minutes.

It is traditionally served on Twelfth Night. The "lucky bean" symbolizes baby Jesus. Whoever finds the bean becomes king or queen of the evening.
